Directions on how to make this Cherry Almond Crunchy Cookie  

1. Preheat oven to 350 degrees F.
2. Spray large baking sheet with cooking spray. 
3. In a bowl, add contents of Cherry Almond Biscotti Mix and stir.
4. Add the 2 eggs, 3 Tbsp. water, and 2 Tbsp. oil.
5. Mix well, (dough will be sticky).
6. Divide dough in halves, then, with moistened hands, form into two logs, 1 x 12 x 3 inches.
7. Bake for 25 minutes.
8. Remove logs from oven to a rack to cool for 10 minutes.
9. Slice into 1/2-inch slices using a serrated knife.
10. Place slices, cut side down, on a large baking sheet.
11. Bake for another 15 minutes.
12. Let cool and enjoy.

Evelyn's Elegant Edibles were inspired by holiday dinners at my grandmother's (yiayia) house. I come from a large Greek family and I have fond memories of the unique dishes prepared for the holidays.
