This Bread Baking Mix should be a pantry staple for anyone who is on a Paleo, Keto, or Vegan Diet. It's easy to make by adding your staple wet ingredients that follow your dietary plan. Not only is this Bread Mix free of gluten, grains, dairy, refined sugars, and preservatives, it doesn't taste like a cardboard box!
All you need to make this gluten free bread are 3/4 cup Milk, 2 eggs*, 1 Tablespoon Oil (such as coconut oil), and 1 Tablespoon Apple Cider Vinegar. Simple ingredients you probably already have on hand and use daily.
*Need egg free? Simple replace each egg with 2 Tablespoons of ground flax mixed with 4 Tablespoons of water and mix until thickened.
Cooking directions
- Preheat your oven to 350 degrees F.
- Grease an 8 x 4 x 2.5 inch bread pan. Line with parchment paper by laying a sheet across the bottom and up to the 2 long sides of the pan.
- Whisk milk, eggs, oil (if using coconut oil or butter, melt before adding), and vinegar in a large bowl. Add the dry mix, Combine well.
- Pour the batter into a prepared bread pan
- Bake for 45 minutes or until the top is lightly browned and inserted toothpicks come out clean.
- Wrap the leftovers in plastic wrap and refrigerate.
Be creative and make Cinnamon Swirl.
Combine 4 Tablespoons of our favorite sweetener (coconut, maple syrup, honey), 2 Tablespoons of melted butter or oil, 1 teaspoon of cinnamon and mix well. Pour the mixer over the batter. Gently swirl into the batter with a knife. Bake for 45 minutes or until the top is lightly browned and inserted toothpicks come out clean.
