Evelyn's Elegant Edibles Athenian Rice Mix is a Sunday Greek dinner classic. Similar to Rice Pilaf, this dish is the perfect complement to chicken. Athenian rice recreates the taste of Sunday dinner at yiayia’s house with onions and chicken base for a great flavor.
Rice cooking directions on a stovetop
In a medium saucepan, add 3 1/2 cups of water and 2 tablespoons of butter to the Athenian Rice Mix. Stir all the ingredients together and bring to a boil. Reduce the heat to a simmer and keep the pot covered.
Cook for 20 minutes or until all the liquids are absorbed and the rice is done. Remove from the heat and serve in your favorite bowl.
Rice cooking directions in a microwave
In a microwave dish, combine 3 1/2 cups of water, 2 tablespoons of butter and the Athenian Rice Mix. Stir all the ingredients together. Cover the dish and microwave on high for 25 minutes.
Stir the mixture halfway through the cooking time. Remove the rice from the microwave and let stand for 5 minutes or until all the liquid is absorbed. Microwave times my vary.
Rice cooking directions in the oven
Preheat the over to 350 degrees. In an oven proof dish add 3 1/2 cups of water and 2 tablespoons of butter to the Athenian Rice Mix. Stir all the ingredients together and place in the oven. In a covered pan, back for 45 minutes or until done.

Athenian Green Beans
- 1 pound of fresh green beans
- 1 packet of Athenian Spice Mix
Clean green beans and cut off the ends. Bring 2 cups of water to boil. Cook green beans until cooked through. Prepare Athenian Spice Mix according to directions on bag.
Drain Green beans, return to pot and add ½ cup of spice mixture to beans, toss to coat.
